What is an Instagram unfollow tracker?

An Instagram unfollow tracker watches two directions. Someone who used to follow the account and no longer does is a lost follower; the account dropping someone is an unfollow.

Instagram records neither, so we build the record: a name counts as gone only if it was on our last complete list, is missing from the next, and is still missing when we look again.
